You can change the workflow properties by editing the workflow rule. In addition to that, you can set notifications to send to the approvers when they have workflow items pending. You can also change the triggering mode after assigning to an object.

If you no longer want a workflow rule triggered for an object, you can either disable or delete the rule for that object.
